The Catholic saint Nicholas of Tolentino (1245-1305) was an Augustinian monk, renowned for his asceticism, and is depicted in the black Augustinian habit with a star on his breast. The bird standing on the dish that the saint holds in his hand refers to one of the miracles attributed to Nicholas of Tolentino. Once, during an illness, he was brought a roast partridge, but when he touched it with words of prayer, the bird came back to life and flew away
