Fourteen key old recipes for pancakes: buckwheat blini, buckwheat blini made half and half with wheat flour, plain wheat blini, buckwheat blini with eggs, Lenten buckwheat blini, "amateur" blini, red blini, milk blini, plain quick blini, apple blini, sweet-and-sour blini, blinchiki, apple blinchiki and semolina blinchiki.

That should see you through the whole week.

Traditional Russian cuisine is far richer and more complex than the one that has come down to us from the Soviet years.

*A short crib to the words from these recipes that have fallen out of common use:*

*snetki: small fish, a variety of smelt;* 
*funt (pound): 453 grams;* 
*zolotnik: 4.2 grams;* 
*krupichataya flour: a special, more coarsely milled flour; the kind that existed in the nineteenth century is not produced here now, and Russian krupchatka does not correspond to it at all; the closest analogues are made in Poland and the Czech Republic, under the names mąka krupczatka, typ 500, mouka polohrubá and hrubá;* 
*Russian butter: clarified butter (ghee);* 
*tartaric acid (vinnokamennaya kislota): a food additive, also known as cream of tartar's acid, sold in powder form.*
